This peppermint fudge by Abigail Marie is perfect for a toasty winter night

To me, nothing quite says it’s the holidays like fudge. Soft, dense, sweet squares infused with cool and refreshing peppermint make for a classic holiday treat loved by young and old alike. This fudge recipe is easier than traditional fudge as it requires no candy thermometer. Simply melt the cocoa butter, and whisk in other ingredients! For the fudge

  • 0.75 cup cocoa butter, measured before melting, raw 
  • 0.5 cup honey
  • 0.5 cup cashew butter, raw
  • 1 tsp. vanilla extract
  • 0.5 tsp. peppermint extract
  • 0.25 tsp. salt

Recipe

Gather and prep ingredients. Line a small rectangle or square dish, about 4 inches by 2 inches, or 4 inches by 4 inches, with parchment paper, set aside.

In a small saucepan, melt cocoa butter over medium-low heat. Add in honey and cashew butter. Carefully whisk until completely dissolved over low heat.

Cut off heat if the mixture starts to bubble. Turn off the heat and add in extracts and salt. Whisk to combine.

Pour fudge mixture into the lined. Leave to set up in the refrigerator for 2 hours. After the fudge has set, cut into 18 squares and enjoy! Store leftovers in an air-tight container for up to 5 days. Happy holidays!
